Gone crackers...

As part of my continued adventures in cooking I started doing a meal delivery every week for some friends. We have similar food issues and tastes in great food, so I knew it would be fairly simple, not to mention fun. One week I decided to make some fresh hummus (without tahini). The problem was that I'd made a promise to myself that I would try as much as possible to make each part of the meal myself. Great idea, until now. How exactly does one go about making crackers? It turns out that I actually had some great resources right at my fingertips. I located a couple of good recipes, one made with Oatmeal Flour, and the other made from White Rice Flour. They were both easy to make, however, it was a challenge getting them to get as thin as the recipes called for (that problem was solved the next time I made them). Both crackers cooked up well, and while I preferred the White Rice Flour based crackers, my clients liked the Oat Flour ones better. Neither cracker had a crunch to it, but the WRF crackers were closer to what I was looking for.
